The quality of the wine depends on : the good husbandry of the vineyards, starting with the pruning of the vine progressing to the harvest which is hand picked in order to select the ripest grapes. The grapes are gently pressed with a modern press in order to extract the grape juice with all its aroma. After the first decantation, the must ferments in the wooden or steel barrels under close daily supervision. The wine is siphoned off to eliminate the sediment (lees) and is left thoughout the winter months to mature. In spring the wine is filtered to clear and stabilise it. The wine is bottled during the summer months.
